
Ingredients
6 fresh Black Mission figs
2 fresh red round tomatoes sliced
12 slices hard crust bread
1 cup pine nuts
1 cup goat cheese crumbles
6 basil leaves chopped
Olive oil and balsamic vinegar
Salt and black pepper
We start by barbequing the fresh figs. Heat your BBQ to medium heat. To prepare the figs cut off the stems and discard them, follow by halving the figs long ways. Season the figs with olive oil, salt, and pepper to taste. When the fire is ready place the figs directly on the grill with the black side down. Watch these figs because they don't take long to cook, or should I say caramelize? After about 90 seconds, flip them over to give the pulp some grill lines. Remove from the grill after 30 seconds and immediately drizzle with balsalmic vinegar. Set the figs aside to cool.
To cook the bread, coat the sides with olive oil and salt. Place on the BBQ to toast on each side making sure not the burn the toast. Set aside the bread after it is toasted
Layer bread, tomato, and fig then sprinkle basil, goat cheese, salt, pepper, olive oil, and balsamic vinegar.
