Sweet Anise & Roasted Vegetables

Ingredients
1 fennel bulb
1 yam
2 new potatoes
2 yukon gold potatoes
1 small onion
1 or 2 carrots
¼ cup olive oil
½ teaspoon thyme
salt and pepper to taste

Directions
Preheat oven to 400 degrees. Cut all vegetables in bite-size pieces and toss with olive oil, thyme, salt and pepper. Stirring every 15 minutes, bake for 1 hour, or until tender and golden brown.
