Colorful Salad

Ingredients:

  • 1 head of Radicchio

  • 1 head of Castelfranco

  • 1 Head of Rosa Radicchio

  • 1 head of green leaf lettuce

  • 2 avocados

  • 1/4 cups chopped Pistachios

Pistachio Citrus Vinaigrette:

  • 1/4 cup of pistachios

  • 3/4 cups olive oil

  • 4 tbsp. red wine vinegar

  • 3 tsp Dijon mustard

  • 1 small shallot

  • 2 tsbp fresh lemon juice

  • 2 tsp honey

Instructions:

  1. Tear salad leaves, and add into a large bowl

  2. For the dressing: blend pistachios, olive oil, red wine vinegar, Dijon mustard, 1 small shallot, lemon juice, and honey in a blender.

  3. Cut avocados and (fresh oranges if preferred). Add chopped pistachios and dressing and toss and serve.
