Colorful Salad
Ingredients:
1 head of Radicchio
1 head of Castelfranco
1 Head of Rosa Radicchio
1 head of green leaf lettuce
2 avocados
1/4 cups chopped Pistachios
Pistachio Citrus Vinaigrette:
1/4 cup of pistachios
3/4 cups olive oil
4 tbsp. red wine vinegar
3 tsp Dijon mustard
1 small shallot
2 tsbp fresh lemon juice
2 tsp honey
Instructions:
Tear salad leaves, and add into a large bowl
For the dressing: blend pistachios, olive oil, red wine vinegar, Dijon mustard, 1 small shallot, lemon juice, and honey in a blender.
Cut avocados and (fresh oranges if preferred). Add chopped pistachios and dressing and toss and serve.
