Summer Pasta Salad w/ Radicchio

Ingredients

  • 1 head of Radicchio

  • 2 cups of arugula

  • 8 oz of Rotini Pasta

  • 1/3 cup of olive oil

  • 1/4 cup of balsamic vinegar

  • 1 shallot

  • fresh basil

  • fresh oregano

  • 2 tablespoon honey

  • 2 cups chopped tomatoes

  • 1 red onion

  • 4 oz goat cheese

Directions

  1. Thinly slice Radicchio and add to a large bowl. Chop tomatoes and onion and them add to the bowl with the arugula

  2. Boil water and add pasta.

  3. For the dressing: add olive oil, balsamic vinegar and honey to a small bowl and whisk. Chop shallot, oregano and basil and add the the bowl. Mix the dressing until blended.

  4. After the pasta is cooked al dente, strain and cool.

  5. Add the pasta, dressing and the goat cheese to the large bowl and toss.
